The origins of Santa Maria della Valle di Iosaphat date back to 1092, commissioned by Adelasia del Vasto, the noble wife of the Norman Count Roger I. The church was part of a grand strategy to establish the Latin rite across Sicily, following the Norman conquest from the Arabs. It was entrusted to the Order of Santa Maria di Valle Josaphat, hence its name.

Beyond its religious role, the church served as a fortress, a necessity following the Arab-led revolt of 1085. Over time, its influence grew through generous donations, notably from Adelasia and her brother Henry, Count of Paternò. In 1114, Bishop Ansgerio granted the church exemption from episcopal jurisdiction, elevating it to a parish and cemetery. This ecclesiastical status was confirmed by Pope Innocent II in 1140, further solidifying its prominence.

In 1445, it was annexed to the Monastery of San Nicolò l'Arena in Catania, ending its independent monastic life. The church's historical archives were transferred, and the convent was repurposed as a hospital in 1866.

In 1951, the church was rededicated to the Marian cult of the Assumption of Mary. Restoration efforts at the turn of the 21st century have helped preserve its legacy for future generations.
